World's Best Baked Mac & Cheese

I'm pretty certain my youngest step-daughter made us the best baked mac & cheese recipe ever for dinner last night!  

She searched Googled and stumbled upon a recipe featured on CHOW from a restaurant in California called Homeroom, turns out making Mac & Cheese is their specialty. I might book a vacation for us to Cali just to go to this magical mac & cheese restaurant! 





We couldn't locate the grated Pecorino Romano cheese (well, because I just realized we were looking in the wrong place!) that the recipe called for, so instead we used a shredded Italian blend that included Romano. It still turned out really amazing, and who knows maybe it turned out even better than the original recipe! 

You start the recipe by making a white sauce, called a béchamel. Next you stir in your measured amount of cheeses (grated Romano or shredded Italian blend plus shredded aged sharp cheddar) and cook over medium heat until melted. Then you pour in the cooked macaroni, mix together, pour it all into a baking dish, top it off with Panko bread crumbs and bake it in the oven to complete the recipe. (You could also serve as is instead of baking it, but then it wouldn't be called baked mac & cheese!)


Ingredients: 

For the Béchamel
  • 4 cups whole milk
  • 8 tbsp unsalted butter
  • 1/2 cup all purpose flour
  • 1 tbsp kosher salt
Other Ingredients: 
  • Kosher Salt
  • 1 lb elbow macaroni
  • 3 cups shredded 6 months aged sharp cheddar cheese
  • 1 cup shredded Italian blend cheese
  • 2/3 Panko bread crumbs 

Directions

For the Béchamel
  1. Heat milk in medium saucepan over medium-high heat until it comes to a simmer, turn off heat and set aside.
  2. In a large saucepan, melt unsalted butter over medium heat. Add flour and whisk for about three minutes or until the mixture turns into a light brown color.  Remove from heat.
  3. While whisking, slowly add the hot milk to the flour mixture until combined. (It may look thick when first added, but will thin out.)
  4. Return the saucepan to medium heat and continue to whisk. Cook until the sauce thickens, about three minutes. Stir in 1 tablespoon of salt and season with additional salt if needed. Remove from heat and set aside.
To Complete the Recipe:
  1. Place your oven rack in the middle and pre-heat to 400°F.
  2. Back to the top of your stove, cook pasta in boiling salted water until it just about reaches al dente,  drain and rinse with cold water, and set aside. 
  3. Place the saucepan of béchamel over medium heat and stir in both cheeses until melted. Pour in the pasta and continue cooking for about four minutes, stir occasional until the pasta is heated through. Next, pour all ingredients into a 3-quart baking dish, top off with Panko bread crumbs, and bake for about 30 minutes or until brown on top. 
  4. Remove from oven, let cool for a minute or two and enjoy!

Simple Strawberry Muffins {and a Giveaway!}

I used the unsalted in my strawberry muffin recipe and topped it off with the perfectly salted butter. I was really surprised by the rich taste, it's probably the best butter I've ever had...seriously! {No April Fool's joke here!}


The recipe called for two sticks of butter and Finlandia butter comes in 7 oz packages, just shy of two sticks, which usually measures to about 8 ounces. Despite the slight difference in the amount of butter used, the muffins turned out quite delicious!

So before I get to the giveaway for a ShopRite® gift card so you can try Finlandia butter yourself, I'm going to share my simple strawberry muffin recipe with you, so when you pick up the butter you'll have a recipe on hand to try out! 

Simple Strawberry Muffin Recipe
{Makes about 18 muffins}

Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 1/2 tablespoons ground cinnamon
  • 1 1/4 cups milk
  • 2 extra-large eggs, lightly beaten
  • 7 oz unsalted butter, melted
  • 2 cups diced fresh strawberries {I thawed out frozen ones}
  • 1 1/2 cups sugar

Directions: 

  1. Preheat the oven to 375 degrees. Place the cupcake liners in your muffin tins and sprinkle a dash of flour in them so the muffins don't stick. 
  2. Mix together flour, baking powder, baking soda, salt, and cinnamon in a large bowl until combined.  In a medium bowl combine milk, eggs, and melted butter. Make a well in the the dry mixture and pour in the wet mixture. Stir until combined. There should be some lumps, so don't over mix the batter. Next, mix in the strawberries and sugar and stir to combine.
  3. Spoon the batter into the muffin cups {I used an ice cream scoop}. Bake for 20 to 23 minutes, check with a toothpick and if it comes out clean your muffins are done! Let them sit for a few minutes in the tins, then place on cooling racks to sit until ready to eat!

Making Monday Easier with Manwich

Monday afternoons are pretty busy in our house. The hubs starts his daily routine to get ready for work, while I put together his thermos full of coffee and cooler full of good eats for his lunch. My youngest step-daughter gets in from school and then off to work, and when her sister lived here she would get ready for work at the same time as well! How do you make a quick, but filling dinner when everyone is in a rush for the door? You make Manwich recipes, of course! 
I grew up eating Sloppy Joes, but haven't tried the Bold or Thick & Chunky style Manwich flavors before and was excited for everyone to try them. 
I love that I can share my favorite memories of what my mom made for me as a kid with my step-kids and make new memories with new Manwich Mondays Recipes.
You really can't beat how it easy it is to make Sloppy Joes! While everyone was running around the house getting ready I whipped up a tasty dinner in less than 20 minutes, making sure that they actually sat down to eat before they left for work. 
After sharing my favorite go to Manwich recipe for Sloppy Joe with the kids last week, I was looking forward to trying the next recipe I had in mind using the Bold flavored sauce.
Not that I had to wait until a Monday to make them, but I knew that today was going to be extra busy since I have to get ready for my women's group business meeting while everyone else will be getting ready for work! 
If you haven't tried the Bold flavor yet, it is a must! It smells so good and taste like smoked BBQ thanks to the mesquite natural flavor that's in the Manwich Bold ingredients. 
I'm so glad I decided to make Manwich taco roll ups with the Bold flavor, they were a big hit with everyone, and again very easy to make for a busy Monday afternoon. 

Manwich Taco Roll Up Recipe Ingredients:
  • 1 lb Lean Ground Beef
  • 15.5 oz can of Manwich® Bold flavor
  • Roll Ups 
  • Spinach 
  • Shredded Cheese
  • Cherry Tomatoes - Sliced 
Directions: 
  • Cook ground beef in large skillet on medium heat for 7 to 8 minutes or until no longer pink. Stir occasionally. 
  • Drain the beef and add in Manwich® Bold flavor sauce and simmer for 5 minutes. 
  • Rinse and dry spinach before placing it on the roll up
  • Add sliced cherry tomatoes
  • Top off with your Manwich® Bold ground beef and shredded cheese, roll up and enjoy!

Heart Shaped Treats for Your Valentine

Happy Monday! Are you planning fun activities for Valentine's Day yet? Maybe a special date night without the kids?  

The day of love tends to put a lot of pressure on the guys, but it really shouldn't be all about us ladies. They deserve just as much love on Valentine's Day as we do and we all know the way to a man's heart is through his stomach! So, I did a little searching on Pinterest and found a few fun heart-shaped treats for your Valentine that won't disappoint. 






1. Raspberry Moscato Cocktail 



So this drink may be a little more fruity than most guys like, but the idea here is to make the heart shaped ice cubes for his favorite cocktail. I think this recipe from Create Celebrate Explore looks amazing, and who knows your guy might like it too! 


2. Heart Shaped Cake



No need to rush to the store for a heart shaped baking pan the night before Valentine's Day! I love this trick and may even test it out using red velvet cake mix. It's a fun idea for Valentine's Day and for your sweetheart's birthday as well! 



3. Peek-a-boo Pound Cake



How adorable are these peek-a-boo hearts? I wonder is this would also work with banana bread, one of my guy's favorites! 

4. Marble Red Velvet Cheesecake Brownies 



These marble red velvet cheesecake brownie hearts from The Novice Chef look more like art than food! Either way, I bet they taste just as amazing as they look. 


5. Heart Shaped Chocolate Chip Banana Pancakes 



My husband is always making breakfast for me; pancakes, waffles, bacon and eggs...okay now I'm hungry for breakfast food! This Valentine's Day I really should return the favor and make him these heart shaped pancakes. You can use a mold like Gina from Skinnytaste did or use a squeeze bottle to squirt the pancake mix into a heart shape onto the pan.

Homemade Turkey Noodle Soup

Happy Monday, how is your 2015 going so far? Ours has been a little busy with my step-daughter's move, which is why I haven't had too many new posts. She is starting to get things in order now and has most of her boxes unpacked. She also purchased a few kitchen items she needed and a few furniture pieces. 

So now that those crazy two weeks are over, it's time to get back to blogging more! From a chair makeover to homemade turkey noodle soup, that's why I named my blog The World Around Her! 


Look at all that yummy goodness! {Note: I had my husband's help with this shot so I could show off all the tasty ingredients!} Not sure if I've actually mentioned his name before or just use husband, hubby, or the hubs all the time! However, Mike {my hubby} was the one who made this recipe so I have to make sure to give him full credit on that part! 


For Christmas we hosted a turkey dinner and he came up with the idea to save the carcass for homemade turkey noodle soup!  It doesn't need to be a holiday to have turkey, but you may want to have family and friends over to help you eat. You'll need to purchase a 15 to 20 pound bird so you have enough meat left on the carcass for your leftover turkey soup! Or you could always purchase sliced fresh turkey from the butcher and use chicken or vegetable broth.

Okay enough from me, on to the recipe...





Soup Ingredients: 
  • 5 qt Stock Pot 
  • 4-5 qts of water
  • Leftover Turkey Carcass from 15 to 20 lb turkey
  • 12 oz bag Egg Noodles {We used No Yolks® extra broad}
  • 3 large carrots {diced}
  • 3 Celery Sticks {diced}
  • 3 large Potatoes {diced}
  • 1 Large Onion {chopped}
  • 1 tsp. pepper
  • 1 tbsp. salt
  • 1 1/2 tsp Old Bay® seasoning

Directions:

  • Add 3 quarts of water to a stock pot.
  • Boil turkey carcass until all of the meat falls off, leaving the cartilage on. Add water as needed while boiling to keep the carcass submurged. 
  • Reduce heat to medium. Remove the carcass and strain any remaining bones from your broth.
  • Add a quart of water if need then add in diced carrots, celery, potatoes, and onion. Stir and cook on medium high for 10 mins. 
  • Add egg noodles and spices, and cook for another 10-12 mins until noodles are tender. Stirring occasionally. 
  • Dish out soup and enjoy! 

I was really excited to taste this soup. I loved how the trukey carcass, vegetables, and spices turned the boiling water into a savory broth. No need to purchase broth from the store when you can make your own! 

 Luckily we haven't had too many snow storms just yet {this time last year we already had three or four big ones}, however the temperatures and wind chills have been pretty dangerous. This soup was so nice to have during those chilly nights, and hopefully my husband will be making it again as the season has only begun!

Christmas Cookie Recipe: Snickerdoodle

Everyone has a favorite Christmas cookie recipe; gingerbread, pretzel hugs, peanut butter blossoms, peppermint sandwich cookies, which I made last year thanks to an amazing recipe from I Heart Naptime, and many more!

This year I have a new favorite: Snickerdoodle! I was searching our recipe box for a new cookie to make when I found this one from Food.com that my stepdaughter printed out a few months ago. 


When she made them I didn't really see the entire baking process, but after finally putting the recipe together myself, I not only had fun eating them but loved making them as well! 


If your kids love making holiday cookies with mom and dad, this is one they will really enjoy putting together. 


The best part about these cookies is making them into little balls to roll around in the cinnamon and sugar mix. What kid wouldn't love that?! 


My all time favorite cookie, no matter what time of year it is, is chocolate chip. However, the snickerdoodle is coming in a very close second. Do you think it could beat out the chocolate chip and come in first place?! 


I'm almost set for Christmas Day, just a few more gifts to get and a few to make! How about you? 

Recipe Ingredients: 
  • 1 cup butter {softened}
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 3/4 cups flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda 
  • 1/4 teaspoon salt 
  • 3 tablespoons sugar {for sugar/cinnamon mixture}
  • 3 teaspoons cinnamon


Directions

  1. Preheat oven to 350°F.
  2. Mix softened butter, 1 1/2 cups sugar and eggs in a large bowl. 
  3. Combine flour, cream of tartar, baking soda and salt in separate bowl. 
  4. Blend dry ingredients into butter mixture. 
  5. Mix 3 tablespoons of sugar and 3 teaspoons of cinnamon together in a small bowl. 
  6. Scoop about 1 inches of dough together and gently roll them into balls. 
  7. Roll the dough balls in the sugar mixture and gently coat them. 
  8. Place on ungreased cookie sheet and bake for 10 minutes. 
  9. Remove from pan and transfer to a cooling rack.

Meatball Tortellini Soup - A Hearty Holiday Recipe in Minutes

I'm so excited to share my very first soup recipe with you guys today, especially since my mom makes one of the best homemade chicken noodle soups around. But this isn't mom's soup, this is a new take on an old classic and a new holiday recipe I'm making with Mezzetta. Do you guys think it will beat out mom's chicken noodle?! 



How gorgeous are the bright colors of Mezzetta's products, they're so pretty to look at just sitting in the jars! I love roasted bell peppers so I grabbed those right away, then I called my husband to find out if it was green or black olives that he liked, and as you can see he likes the green ones! I was intrigued by the peperoncini and decided to grab those as well!



When I looked at the peppers and olives I purchased, the first recipe that came to mind was a pasta salad. But that just didn't strike me as a cozy and warm holiday recipe that I would want during this time of year.

Winter always reminds me of mom's chicken noodle soup, but that takes too much time to make when you have guests over for the holiday season. That's when I thought of the frozen meatballs and tortellini I had in the freezer....and on came the light bulb! 



Holiday celebrations and holiday family gatherings usually last more than one day, especially when your guests have traveled far to visit. So that means you're going to need more than a day's worth of food to feed them. Luckily I'm here to save you and your hungry guests with my meatball tortellini soup featuring Mezzetta roasted bell peppers, peperoncini, and olives! {Not the typical ingredients for meatball tortellini soup, but I was excited to experiment and make a Mezzetta twist on an old favorite!}

Recipe Ingredients: 

2 cups of frozen meatballs {thawed} 
3 cups of tortellini 
4 cups of beef broth {you can also use chicken or vegetable broth}
1/2 cup of green olives {sliced or diced}
1/2 cup of roasted bell peppers {diced}
1/2 cup of peperoncini {sliced}
1/2 tsp. of parsley 
dash of salt & pepper 

Directions: 
  • In a large pot bring the stock to a boil. Stir in the meatballs. Turn down the heat and let simmer for five minutes. 
  • Add in the green olives, roasted bell peppers, and peperoncini. Simmer for another three minutes. 
  • Stir in the tortellini, parsley, salt, and pepper. Simmer for another three to five minutes. 
  • Remove from heat, serve, and enjoy!

You really can't go wrong with adding any of your favorite vegetables to meatball tortellini soup, or even using chicken sausage instead of meatballs.

Pumpkin Spice Chocolate Chip Cookies

I bought a can of Pumpkin puree a month ago and had been searching high and low for the perfect recipe to use to make something special for my Pumpkin Craft Night. Did I want to make pumpkin bread, pumpkin cookies, or something else? When it finally came time to make a treat for the craft night I wasn't up to making something with too many ingredients or steps. Luckily that's when I stumbled upon Desiree's three ingredient pumpkin chocolate chip cookie recipe on The 36th Avenue

Three ingredients, I can handle that...right?! Well, I actually used five ingredients, two are optional as you'll read below. Are you ready for these amazing, delicious, I want to eat the entire batch in one sitting, cookies?! 




I bet you are trying not to lick the computer screen right now, aren't you?! 


Pictured with the pumpkin spice chocolate chip cookies are the three main ingredients that Desiree mentioned on her recipe post. I included her one optional ingredient, brown sugar, but also added a few dashes of pumpkin pie spice to the batter as well. 


I figured the pumpkin pie spice would add a bit more pumpkin taste to the mix, plus I hadn't used it in a recipe yet and wanted to test it out! These cookies were so easy to make and would be a great recipe to introduce to your kids when they start to get interested in helping mom out in the kitchen. 

Ingredients: 
  • 1 box of Spice Cake 
  • 1 large can of Pumpkin Puree 
  • 1 bag of chocolate chips 


Optional 
  • Brown Sugar 
  • Pumpkin Pie Spice 

Directions: 
  • Preheat oven to 350°F
  • Combine the spice cake mix (no eggs, water or oil needed) and pumpkin puree in a large mixing bowl.  
  • Add a few dashes of pumpkin pie spice. 
  • Mix in the chocolate chips 
  • Using a table spoon place the batter on a cookie sheet. 
  • Sprinkle brown sugar on top of each cookie. 
  • Bake for 7 to 10 minutes depending on your particular oven.

The cookies are a bit softer than your average chocolate chip cookie, but should be firm. 

I hope you enjoy making and eating these cookies as much as I did. They were a big hit during the pumpkin craft night, which I will have more details and photos from on the blog tomorrow so stop back.

1. Crockpot Chicken Chili...
I've been waiting for cooler weather to start the crock pot and make one of my favorite chicken recipes that I shared with you guys last year when I found it on East Coast Creative. It's so easy to make, and taste so good that you'll want to dive in for seconds and maybe even thirds! Stop by the EC2 blog for the complete recipe details. 

2. Fall Front Porch...
It doesn't take much to make a small space look festive for the holidays, you don't want to over do it but you don't want to skimp on the details either. These simple tips from Jen of Tatertots and Jello on how to create a beautiful fall front porch show you how to create just the right amount of character and charm by using more than just fall decor. My favorite ideas that help pull the look together for any season are the rug and seating area. Throw in some pumpkins and a festive wreath and you are good to go! I can't wait to decorate my front porch area for fall! 

3. Tribal Pumpkins...
This DIY pumpkin post from Bliss at Home may be from last year, however the tribal trend doesn't seem to be going away any time soon. I'd like to get a little more creative with pumpkins this year, there is more to them than just carving out a jack o' lantern! Kristin used white craft paint to create the arrows on her pumpkins, and well that's it! Fall decor can't get easier than that folks. 

4. Candy Corn Wreath...
I love the ombre effect on this candy corn wreath from Whipperberry, it's not your typical fall wreath but works so well the colors of the season. I used to be a big fan of candy corn, but I guess as I got older I realized that there is a world full of candy out there that tastes much better! I may no longer enjoy eating candy corn, but this wreath is pretty cool and looks fun to make. 

5. Pumpkin Spiced Latte....
Coffee house lattes can really pack on the calories and may include unnecessary ingredients. So what's a girl to do when she can't get enough of the pumpkin spiced latte during the fall and winter seasons? Well thanks to This Girl's Life blog, this girl (me!) can make a homemade version...yum! 

6. DIY Pumpkin Jars....
I am currently obsessed with painting mason jars, oh wait until you see the DIY project I'm going to share with you later this week! OK, back to these adorable pumpkin jars from The 36th Avenue, I mean they are just too cute! I would love to place these with my fall owls that sit on the bay window sill in my kitchen, especially that little fat jar in the front....oh my word!
