Happies

1. It's Fall y'all! Like I mentioned in my previous post, I really love this time of year. We were considering getting married in Fall, but pushed the wedding back to the following Spring so we could have a bigger budget! I loved our colors for Spring, but deep purples would have been gorgeous with the beautiful Fall foliage. 


So pretty and peaceful, I took this photo at the lake near our house. 


2. We finally picked up our pumpkins for carving! Last year we never carved or purchased any pumpkins and my youngest step-daughter wasn't too happy about it, she told us this year we better get them! I'm still not sure if I want to carve or just create a pretty design with some washi tape and paint/markers? What do you think? 

3. Tomorrow we are going to a Halloween birthday party and we get to dress up! This is the first year we have actually dressed up as a couple, twice in fact! A few weeks ago we went to my husband's cousin's kid's 4th birthday party...that's a mouth full huh! I dressed up as a retro/ Sandy from Grease type of chick with a bandana in my hair and wore black tights (yoga pants), with a black top. My husband was a biker, and looked pretty cool too! This weekend the theme for the party is witches and vampires, I'm so excited! 


My outfit didn't really stand out as a costume, so I'm excited to really get into character this weekend! 

Crappies:

1. The weather has been so bizarre this season. I had a cool, dark denim jacket I was going to wear for the Halloween party mentioned above and it ended up being 80 degrees that day! It was earlier this month, but still crazy hot for October! Oh, but now it's 50 degrees out only a few weeks later, and in the 30's at night! This is a definite crappy!  

2. Right now I'm not too happy with my food habits and lack of fitness routine. I know I shouldn't be too hard on myself, because I still fit in the clothes I was wearing last year, but some of the sweaters are a little snug. I just don't want to go back to the unhealthy state I was a few years ago. It can be hard to keep up, especially when you work from home. But I am now on my fourth day of getting back into doing my Jillian Michaels DVDs, love them and her! So I'm on the right track! 

3. My hair is in the middle of a transition, it isn't long and it isn't short! LOL! OK, it's still short, but it just has this awkward look going on. I'm not sure how to style it, so pretty much I just straighten it or blow dry it, but it seems to be laying weird. I miss my long hair, so I think I want to keep it about shoulder length. GROW HAIR...GROW!

What Fall Taste Like!

Who doesn't love the taste of Fall, if you don't well too bad because that's what my post is all about! Pumpkin flavor is everywhere, it started last year with pumpkin spice lattes, pumpkin donuts, and pretty much pumpkin everything! So we thought we would jump on the bandwagon and make pumpkin cookies, they were okay but not the greatest. A few weeks ago I noticed we still had an unopened can of pumpkin puree sitting in the cabinet and I kept thinking, "How can I one up that cookie recipe!"

Last year I had pumpkin pancakes at an adorable country restaurant and have been dreaming of them ever since. So, I thought why not make some myself...with the help of my hubby! The recipe was a winner, which made me feel much better about baking more with pumpkin puree, I just couldn't leave that bad cookie recipe hanging over me and haunting my pumpkin dreams!




The pancakes only called for 3/4 cups of canned pumpkin, so what was I to do with the rest of the can? Cupcakes first came to mind, but I'm pretty cupcake'd out at the moment. Then I thought, "How amazing would a pumpkin spice muffin be in the morning with a cup of pumpkin spice coffee!" NAILED IT!! OH and do I mean, I nailed it! 



Note the actual pumpkin in the photo is not what I used....just for looks! I knew the true test would be how well my daughters liked them, and when they said they loved them...well now Mama knows what she'll be making more of! 

It's a pretty simple recipe, however I did notice that in the ingredients it only called for baking powder and in the directions it mentioned the powder as well as baking soda. What was I to do? So I read the comments to see if it was noted and one reader mentioned that she used 1/2 teaspoon of baking soda....sometimes it's the smallest ingredient that can throw off your recipe! 

The recipe also called for pumpkin spice, which is noted in the comment section is a blend of nutmeg, cinnamon, ginger, and allspice. Well, mama didn't have all of those ingredients so she improvised and just added an extra teaspoon of cinnamon to the recipe, the other teaspoon of cinnamon is for sprinkling on top. Where Have I Been?!

Things have been a little quiet on my blog again, sorry for leaving you hanging....if anyone is still out there reading!

I have some really awesome news to share with you, I have been interning for a new blog....told you it was awesome! I am helping them out with social media, emails, and tweaking their posts. It has been a little over a month now since I started and things couldn't be better! Oh, so I guess I should share with you who they are, well they are the ladies of East Coast Creative, and would you believe they also have a TV show called Knock it OffCheck out their blog post where they mentioned me!

They are super cool, easy going (but hard working), inspiring women who are taking over the DIY world! Would you believe Monica has four kids and Jess has three, I told you they are hard working! So if you need some inspiration, if you're feeling stuck and need a little push, let their story, their blog, and their TV show inspire you!  

Yep I just used three exclamation points in that paragraph, I'm not excited or anything.
